The chef conjures up the best of French cuisine, but does so with the shameless use of British products and ingredients.
The flawlessly performed dishes, like the langoustine with pork belly and sweet spice or the now famous saddle of rabbit with calamari and tomato risotto, can bring the guests to the verge of ecstasy.
