Terrific tuna at Sheraton

The Sheraton Pattaya Resort's new executive chef has more than a decade of culinary experience at top hotel restaurants around the Asia-Pacific rim. Matthew Woolford, a native of Sydney, studied commercial cookery at the Institute of Western Sydney and began his career as an apprentice at the Sydney Hilton Hotel.

 He broadened his horizons by moving to Asia, where he ran kitchens in Phuket, Singapore, Krabi, Bangkok, Seoul and Hong Kong before returning to Thailand to head the kitchen at the Sheraton.

His plan is to have the Sheraton Pattaya restaurants make some of the best cuisine in the region by producing simple and uncomplicated dishes that bring out the natural flavours of their ingredients.

Woolford has been married to a Thai, Sasiwan, for eight years, and they have a young daughter, Ivy Ploy. Here's a recipe of the chef's signature dish:
